Ingredients
  

  • 1 lb linguine
  • 1/4 cup kosher salt
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • lbs boneless chicken breast diced
  • 2 tbsp Emeril’s Essence see notes
  • tsp salt divided
  • 1 cup chopped yellow onion
  • 1 tbsp minced habanero
  • 1 tbsp minced garlic
  • cups heavy cream
  • 1 cup diced tomatoes
  • ½ cup reserved pasta water
  • ½ cup chopped green onion tops
  • ¼ cup grated Parmesan
  • 2 tbsp chopped parsley

Instructions
 

  • Boil linguine until al dente; reserve pasta water.
  • Make Cajun spice blend and season chicken.
  • Sear chicken until golden; remove.
  • Sauté onions, garlic, and habanero; pour in cream and seasoning.
  • Simmer to reduce; add chicken, pasta, and tomatoes.
  • Toss to coat; stir in Parmesan and parsley.
  • Serve hot with garlic bread and a sprinkle of herbs

Notes

Adjust spice level as preferred. Add extra cream for a milder, silkier finish
