Big Mac Tacos

Ingredients
  

  • For the Special Burger Sauce
  • 250 grams 1 cup whole-egg mayonnaise
  • 2 tablespoons gherkins dill pickles, finely chopped
  • 1 teaspoon Dijon mustard
  • 1 tablespoon ketchup
  • ½ teaspoon sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Sea salt flakes to taste
  • Freshly cracked black pepper to taste
  • For the Tacos
  • 500 grams 1 pound minced (ground) beef, lean or regular
  • 8 small soft flour tortillas
  • 1 teaspoon sea salt flakes
  • ½ teaspoon freshly cracked black pepper
  • Olive oil spray for light greasing
  • 8 slices American burger cheese
  • 60 grams 2 cups lettuce, shredded iceberg, romaine, or gem lettuce
  • 75 grams ½ cup gherkins (dill pickles), sliced
  • ½ cup onion finely diced

Instructions
 

  • In a small mixing bowl, combine the whole-egg mayonnaise, finely chopped gherkins, Dijon mustard, and ketchup.
  • Shake in the sweet paprika, onion powder, and garlic powder, then add a small pinch of sea salt flakes and freshly cracked black pepper to taste.
  • Stir the mixture vigorously until completely smooth, uniform, and creamy, then cover and chill in the refrigerator.
  • Separate the minced beef into eight equal portions and work with one piece at a time.
  • Place the meat onto the center of a small flour tortilla and use clean hands to press it outward in a thin, even layer, leaving a tiny 5 mm border around the edge.
  • Repeat the pressing process for all eight wraps.
  • Place a large, heavy-based frying pan or cast-iron skillet over medium-high heat until thoroughly hot.
  • Sprinkle the exposed beef layer with a light dusting of sea salt flakes and cracked black pepper right before cooking.
  • Spray the hot skillet lightly with olive oil spray and carefully place one tortilla into the pan, meat-side facing downward.
  • Cook undisturbed for a few minutes until the beef develops a deeply browned, savory crust.
  • Using a wide spatula, carefully flip the tortilla over so the flat bread side faces downward.
  • Cook the bottom side briefly to get it lightly golden and warm.
  • If any excess moisture or fat remains around the meat edges, flip it back over for a short moment before turning it meat-side up again.
  • Immediately place a slice of American burger cheese right on top of the hot beef, then remove the taco from the skillet onto a warm plate so the residual heat melts the cheese.
  • Repeat the cooking process with the remaining portions.
  • Pile a generous handful of crisp, shredded lettuce onto each warm taco.
  • Scatter the finely diced onions and sliced gherkins evenly across the top.
  • Finish each piece with a beautiful, generous drizzle of the chilled special burger sauce and serve immediately.

Notes

• Pro Seasoning Tip: Never mix salt into the raw ground beef ahead of time, as it draws out moisture and creates a tough texture. Always sprinkle the seasoning on the meat at the very last second before it hits the hot pan.
• Grease Management: Regular ground beef provides a very juicy finish but can release excess oil. Use a paper towel to carefully blot excess fat from the pan between batches, or use lean ground beef for a cleaner cooking process.
• Keep Warm: Keep completed portions warm while finishing the rest by placing the cheese-topped tortillas on a baking sheet inside a warm oven preheated to 120°C (250°F). Add the fresh, cool toppings right before eating.
• Storage: These are best enjoyed fresh. If you have leftovers, store the cooked cheesy beef tortillas, diced onions, shredded lettuce, and special sauce in separate individual airtight containers in the fridge for up to two days. Reheat the beef tortilla in a dry skillet before assembling. This recipe is not suitable for freezing.
