Ingredients

  • Greek yogurt or half mayo / half sour cream – ½ cup, for a creamy, tangy base
  • Lime juice – 1–2 tablespoons freshly squeezed for brightness
  • Chili powder – 1 teaspoon adjust to taste
  • Cumin – ½ teaspoon adds warmth and depth
  • Onion powder – ½ teaspoon for mild sweetness
  • Garlic powder – ½ teaspoon enhances savory flavor
  • Cotija cheese – 2 tablespoons crumbled for authentic Mexican taste
  • Red pepper flakes optional – pinch, for extra heat
  • Coarse salt & pepper – to taste

Instructions

Mix it up:

  • In a small bowl, combine all ingredients—Greek yogurt, lime juice, chili powder, cumin, onion powder, garlic powder, cotija cheese, and seasonings. Whisk until smooth and creamy.

Taste and adjust:

  • Give it a taste and tweak as needed. Add extra salt, lime juice, or chili powder to suit your flavor preference.

Serve or store:

  • Use immediately, or store in an airtight container in the refrigerator for up to 5 days. Stir before serving if it separates slightly.

Notes

  • Make Ahead: Can be prepared up to 5 days in advance and stored in an airtight container in the refrigerator.
  • Adjust Spice: Add more chili powder, red pepper flakes, or cayenne for extra heat, or reduce for a milder flavor.
  • Consistency: Thin with a teaspoon of water or lime juice if too thick; add extra Greek yogurt or cotija cheese if too thin.
  • Dairy-Free Option: Use plant-based yogurt and vegan cheese for a dairy-free version.
  • Serving Ideas: Great on salads, tacos, burrito bowls, roasted veggies, or as a dip for chips and fresh veggies.
  • Flavor Boost: Roasting corn or adding smoked paprika/chipotle powder enhances smoky flavor.
