  • Green Beans: 12 oz approx. 340g, trimmed and snapped into pieces
  • Garlic: 3 cloves finely minced
  • Ginger: 1 tablespoon freshly grated or minced
  • The Savory Sauce
  • Soy Sauce: 3 tablespoons
  • Oyster Sauce: 1 tablespoon
  • Cornstarch: 1 teaspoon
  • Water or Chicken Broth: 1/4 cup
  • Cooking Oil: 2 tablespoons vegetable or canola

Instructions
 

  • Whisk together the soy sauce, oyster sauce, water or broth, and cornstarch in a small bowl until the starch is completely dissolved and no lumps remain.
  • Heat one tablespoon of oil in a large wok or skillet over medium-high heat until shimmering, then add the chicken in a single layer to sear until golden brown and cooked through.
  • Remove the chicken from the pan, add the remaining oil, and stir-fry the green beans until bright green and tender-crisp.
  • Add the minced garlic and ginger to the beans during the last minute of cooking, stirring constantly to ensure they become fragrant without burning.
  • Return the cooked chicken and any juices to the pan, give the sauce mixture a quick stir, and pour it over the ingredients.
  • Toss everything together over heat until the sauce bubbles and transforms into a thick, glossy glaze that coats every piece.
  • Remove from the heat immediately once the sauce has thickened and serve hot.

Notes

• Prep is Key: Because stir-frying happens so quickly, have all ingredients chopped and the sauce mixed before turning on the stove.
• Dry the Veggies: Ensure the green beans are patted dry after washing to achieve a nice char rather than steaming them.
• Heat Control: If the sauce thickens too quickly or becomes too heavy, add a splash of water or broth to reach your desired consistency.
• Grain Pairing: This dish is best served over jasmine rice, brown rice, or rice noodles to soak up the savory sauce.
