Ingredients

  • Ingredients
  • For the Honey-Lime Chicken
  • 1 lb boneless skinless chicken breast cubed
  • 2 tbsp honey
  • Juice and zest of 1 lime
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • Salt & pepper to taste
  • For the Avocado Rice
  • 2 cups cooked rice white, jasmine, basmati, or brown rice
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro optional
  • Salt to taste
  • For the Avocado Layer
  • 1 –2 ripe avocados mashed
  • Juice of ½ lime
  • Salt & pepper to taste

Instructions

  • 1. Marinate the Chicken (15–30 minutes)
Whisk together honey, lime juice, lime zest, olive oil, minced garlic, salt, and pepper in a bowl.Add cubed chicken and toss well to coat.Cover and refrigerate for 15–30 minutes. Don’t exceed 1 hour — the limeacid can start to toughen the meat.
Pro Tip: The zest adds deeper citrus notes thatbalance the sweetness of the honey glaze.
  • 2. Cook the Chicken (8–10 minutes)
Heat a skillet over medium-high heat. Add marinated chickenand cook for 3–4 minutes per side, until golden and caramelized.Ensure the internal temperature reaches 165°F (74°C).
If using a grill, brush lightly with oil and cook on mediumheat for a smoky flavor.
Tip: Avoid overcrowding the pan — sear in batches foreven browning.
  • 3. Make the Avocado Rice
Fluff the warm rice with a fork, then stir in lime juice, chopped cilantro, and salt. This gives the rice a refreshing, zesty flavor that complements thesweet-savory chicken.
Prevent Browning: Add a touch of lime juice or olive oil to keepthe avocado layer vibrant green
  • 4. Smash the Avocados
In a small bowl, mash avocados with lime juice, salt, andpepper.Keep it slightly chunky for texture — not a smooth paste.
  • 5. Assemble the Stack
For a restaurant-style look, use a ring mold or a ramekin:
Visual Tip: Add a drizzle of honey-lime sauce on topfor extra shine.
Spoon rice into the bottom and press gently. Add the avocado layer and spread evenly. Top with honey-lime chicken. Lift the mold carefully to reveal a beautiful stacked tower. Garnish with fresh cilantro and lime zest.

Notes

  • Use ripe-but-firm avocados for perfect texture.
  • Don’t reuse raw marinade — discard or boil it before drizzling.
  • Let chicken rest for 5 minutes before slicing to lock in juices.
  • Add a pinch of red pepper flakes for gentle heat.
