Ingredients
  

  • 1 cup light corn syrup
  • 1 cup powdered sugar
  • 1 cup peanut butter chunky or creamy
  • 1 teaspoon vanilla extract
  • 4 cups rice crispy cereal

Instructions
 

  • Set up a workspace by laying out waxed paper or silicone mats on the counter.
  • Stir the light corn syrup and powdered sugar together in a large saucepan over medium heat.
  • Keep the mixture moving constantly until it reaches a full, rolling boil.
  • Take the pan off the heat immediately to prevent the sugar from becoming too hard.
  • Blend in the peanut butter and vanilla extract until the mixture is perfectly smooth.
  • Gently fold in the rice crispy cereal until every piece is evenly coated.
  • Drop small portions of the warm mixture onto the prepared paper using a spoon.
  • Roll the mounds into neat spheres once they are cool enough to touch with lightly greased hands.
  • Allow the candies to rest at room temperature until they are firm and fully set.

Notes

• Remove the syrup from the heat the moment it boils; overcooking will make the treats brittle.
• Store these in an airtight container at room temperature to maintain the best texture for up to a week.
• For a different flavor, try using chocolate-flavored puffed rice cereal or adding a chocolate drizzle on top.
