Traditional Czech Vomacka Soup Recipe (Creamy Potato & Dill Soup)

Ingredients
  

  • Base Ingredients
  • Butter: 1 stick
  • Onion diced: 1
  • Carrots peeled & sliced: 2
  • Celery stalks chopped: 2
  • Green beans chopped: 3.5 oz (100g)
  • Potatoes peeled & cut into chunks: 3
  • Minced garlic: 1 tbsp
  • Heavy cream / sour cream / milk: 1 cup
  • Chicken broth: 3 cups
  • Water: 1 cup
  • Seasoning
  • Oregano: 1 tsp
  • Ground black pepper: 1 tsp
  • Garlic powder: 1 tsp
  • Dried Italian herbs: 1 tsp
  • Salt: To taste

Instructions
 

Chop and Prep

  • Dice the onion and peel the potatoes. Slice the carrots, chop the celery, and cut the green beans into bite-sized pieces. Preparing all ingredients first makes the cooking process smooth and stress-free.

Sauté the Base

  • In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, cooking until fragrant and soft. The aroma of sautéed onions and garlic is the perfect start to this hearty soup. 😋

Build the Flavor

  • Stir in the carrots and celery, cooking for 3–5 minutes until slightly tender. This step helps release the vegetables’ natural sweetness.

Add the Heartier Vegetables

  • Toss in the potatoes and green beans. Optionally, stir in some chopped fresh dill for an extra layer of flavor. The potatoes will help naturally thicken the soup as they cook.

Season Generously

  • Sprinkle in oregano, garlic powder, dried Italian herbs, black pepper, and a pinch of salt. Mix well to coat the vegetables evenly. Adjust seasoning to taste, but remember, you can always add more later.

Simmer the Soup

  • Pour in the chicken broth and water. Cover the pot and simmer on medium heat for 15–20 minutes, or until the potatoes are fork-tender. Your kitchen will start to smell like a traditional Czech home!

Mash and Add Cream

  • For a thicker texture, mash a few of the potato chunks with the back of a spoon. Then stir in the heavy cream, sour cream, or milk until the soup is creamy and smooth. This step makes the soup extra velvety and indulgent.

Serve Hot

  • Remove from heat and ladle the soup into bowls. Serve warm with crusty bread, dumplings, or a cozy casserole on the side. Perfect for a family dinner or a casual gathering.

  • Cream Options: You can use heavy cream, sour cream, or milk depending on how rich you want the soup to be. Heavy cream gives the thickest, creamiest finish.
  • Thickening Tip: Mash a few cooked potato chunks directly in the pot to naturally thicken the soup without flour.
  • Don’t Overcook Potatoes: Keep an eye on them — too soft and the soup can become mushy.
  • Prevent Curdling: Always add sour cream or milk after removing the pot from heat.
